Vanilla Tahitensis

Recognisable by its hooked, curling tip and an aroma that is sharper and more floral-fruity than planifolia. The preferred bean for perfumery, premium desserts and fine-dining kitchens, where the vanilla is meant to be tasted, not merely felt.

Origin & Process

Nine months on the vine. Six more in the curing room.

Vanilla is the second most labour-intensive spice in the world, and almost all of that labour happens before the pod is packed. Every lot we ship goes through these six stages.

1

Hand pollination

Each flower opens for a single morning and is pollinated by hand, one bloom at a time.

2

Maturation

Pods stay on the vine for 8–9 months, until the tips begin to yellow.

3

Killing & sweating

Hot-water blanching, then sweating in insulated boxes to start enzymatic development.

4

Sun-drying

Weeks of alternating sun and shade reduce moisture gradually and build vanillin.

5

Conditioning

Months of rest in closed containers let the aroma round out and stabilise.

6

Grading & packing

Hand-sorted on length, suppleness and moisture, then vacuum-sealed in food-grade film.

Packing & Logistics

How it is packed, and how it travels.

Vanilla loses value through moisture loss and mould, and both start as packing problems. Our packing specification is designed to hold moisture stable through a long sea transit.
